Uniform sized and shaped, batons of formed Halloumi Cheese in a smooth, light golden batter (golden batter for when fried) with fine parsley & red pepper flecks. The batons will be fully and evenly coated with the batter, although some roughness and thinner patches of batter are acceptable. The Halloumi is white and has a finely minced and slightly aerated appearance, without excessive oiliness. The batons shall have good adherence to the batter coating with some pull away / cavities acceptable. Excessive marriages and welded pieces are not acceptable.
Exterior has a smooth surface and is dry and crispy (when fried this should be slightly more audible and crispy with the batter being a touch more flakey), doughy batter around the core is not acceptable. The cheese will be soft, there will be no oiliness or oily mouth coating after eating. The coating will be light and crisp.
Fresh fried oil aroma, with a salty, creamy cheese taste with a hint of mint. No off flavours or aromas. The batter will be savoury with no flavour of parsley or red pepper.
