Visible fat residue: ≤5% per fillet.
Small bones: <7mm, max 8 pieces per 100kg.
Large bones: >7mm, max 2 pieces per 100kg.
Small cartilages: <5mm, max 10 pieces per 100kg.
Large cartilages: 5-12mm, max 6 pieces per 100kg.
Critical cartilages: >12mm, max 2 pieces per 100kg.
Small light blood spots: <10mm, max 100 per 100kg.
Large light blood spots: >10mm, max 60 per 100kg.
Small dark blood spots: <20mm, max 40 per 100kg.
Large dark blood spots: >20mm, max 20 per 100kg.
Insignificant frost burns on frozen meat allowed.
Not Allowed:
